From the garden to the bottle

A local food project being built in public.

Three Little Peppers is developing small-batch pepper sauces and jellies in Grants Pass with a simple idea: grow interesting peppers, build flavors around what is actually available, let real people taste the experiments, and use the feedback to decide what deserves to become a repeatable commercial product.

The garden story is connected to Martin Family Farms, where peppers and other ingredients are grown locally. 3LP’s commercial products are still in development, so the Flavor Lab clearly separates experimental and farm-direct batches from future certified releases.

Experimental sauces and recipes get documented instead of disappearing after one batch. Visitors can see what is being tested and what may come next.

HeatMapped

3LP collects preference data from tasters so recipe decisions are grounded in what people actually enjoy—not just what sounds good on paper.

Southern Oregon roots

Peppers, produce, local collaborations and community events are part of the product-development process from the beginning.

What tasters are telling 3LP right now.

HeatMapped is the feedback loop behind the Flavor Lab. These are aggregate preference signals from the current survey—not sales figures and not claims that every future recipe will follow the majority.

44.1% Hot but enjoyable The largest heat preference in the current response set.
19 Sweet Heat mentions The most common flavor-personality signal so far.
18 Smoky mentions Close behind Sweet Heat and ahead of Savory, Fruity and Tangy.
38.2% Smooth & pourable The leading texture preference, with another 35.3% reporting no texture preference.

Other strong signals: tacos/burritos were mentioned 25 times as a sauce pairing, eggs 17 times, and low-to-moderate vinegar profiles showed the clearest preference. Survey results will change as more people participate.

Help decide what gets another batch

Your taste can influence what 3LP builds next.

If you like fruit-forward sauces, smoky heat, breakfast sauces, taco sauces, pepper jellies—or something 3LP has not tried yet—add your preferences to HeatMapped. The more local responses come in, the more useful the signal becomes.
